Hotel Chelsea is acquiring a bit of Spanish flare. The hotel announced that it is acquiring the 84-year-old restaurant El Quijote, which exists on the ground floor of Hotel Chelsea. According to Eater, a rep for Chelsea Hotels says the new owners will “retain the signature look and feel of El Quijote” while “maintaining its authenticity.” The company also claims that they will keep the same staff and the same food. Manny Ramirez, El Quijote’s proprietor, will still be involved in the restaurant.
